Sue's Flax Seed & Walnut Pesto
I found a great way to get all those good Omegas into
my diet. I'm not a real fan of raw flax seeds; however, I love pesto.
I recently started putting flax seeds in my pesto. Before I give you my
recipe, let me say that I'm really a hand full of this and pinch full
of that kind of cook. I did take out some measuring devices for this recipe,
but I wouldn't take it personally if you decided to modify it for yourself.

Ingredients for Pesto
A well-packed cup of Basil Leaves
About a tablespoon of Flaxseed
About 2 tablespoons of Walnuts
2 cloves of Garlic
1/2 teaspoon of Coarse Salt
1/4 cup of Extra Virgin Olive Oil
1/4 cup fresh grated Parmesan cheese
I usually chop the walnuts and garlic up a little bit
before adding them and the rest of the ingredients in the blender. With
this small amount of basil, you'll have to stop the blender and stir the
ingredients several times to get the mixture to the proper texture.
We cook whole grain spaghetti, drain the pasta, and add
the pesto with some freshly grated Parmesan cheese. This is enough for
2 very hungry adults, or as a side dish for a family of 4. Sorry I don't
have nutritional information. Maybe with all that olive oil, I don't want
to think about it.

This is what my pesto looks like before I add the Parmesan
cheese. I've placed it in a canning jar for freezing. I'll add the cheese
when I serve the pesto.
